Last minute Thanksgiving recipes may be just what the doctor ordered, with the Canada holiday just around the corner. Thanksgiving in Canada is held on the 2nd Monday in October, and this year that date is Monday, October 10.
So what should the busy working girl, or single guy whose parents are coming around, do for last minute Thanksgiving recipes? Or you have family members or friends bringing kids??

Easy Thanksgiving Turkey
First, don't buy an entire bird - it takes too long to thaw, much less cook, for a "last minute" situation. In fact, some people resort to Cornish Hen as a cute and easy alternative. But for you last-minute types, try making turkey cutlets. They are normally purchased as cutlets in a pre-wrap (it would probably work with ground turkey, too). Dredge each cutlet in a little beaten egg, then seasoned flour, and fry them up. Make pan gravy (if you know how), or just simply buy jarred gravy. Let the gravy and cooked cutlets simmer together for a little while, the whole house will smell like Thanksgiving!
Stovetop Stuffing has been a lifesaver for millions of moms - or use 4-5 slices of toasted bread you season yourself, softened with melted butter and water - and bake that as your side instead of potatoes. A canned or frozen vegetable, even a pre-mixed salad, is good enough for a quick gobble.
Easy Sweet Potatoes with Marshmallows
It isn't hard to keep a big can of canned sweet potatoes or yams in the house, and a bag of marshmallows is cheap. Drain the potatoes of their liquid, smash them with some melted butter and a touch of cinnamon, put them in a buttered casserole dish, top with marshmallows (and pecans or walnuts if you have them), and bake until brown on top. YUMMY! For an alternative, add some chopped pineapple to the potatoes.
Not enough time to bake a pie? Peel some apples and put them in a pot (no water) to start slowly cooking down. When the apples are soft and gooey, add a teaspoon of vanilla, mix it up, and put a small amount in a number of dessert dishes. Top with whipped cream and nuts.
